Every month, we are happy to celebrate a new recipe from one of our outstanding employees. In this month’s Dish, we feature Shana Todey and her delicious Chile Con Queso! For this month’s Dish, Shana Todey has given us her Dine In and Dine Out choices. Check them out below!

Dine In

Shana’s favorite Dine In recipe to enjoy with her family is Chile Con Queso . Though it’s a great treat anytime, she especially loves it during Sunday afternoon football game watching with her family. Heres how she makes it:

“The Pioneer Women’s Chile Con Queso”

  • One 1-pound package refrigerated hot breakfast sausage
  • 1 onion, diced
  • One 2-pound block processed cheese, such as Velveeta
  • One 10-ounce can diced tomatoes and green chilies
  • 2 cans chopped green chilies
  • 1 jalapeno, diced
  • Chips, for serving

Brown the sausage and onion in a large nonstick skillet, breaking the sausage up as you go. Once browned, drain off some of the fat. Chop the cheese block into cubes and add along with the diced tomatoes and green chilies and chopped green chilies, juice, and all. Cook over a low heat until it all starts coming together. Then stir in the diced jalapeno. Serve with chips.

Dine Out

Shana’s favorite place to eat out is Uncle Julio’s in Fort Worth, Texas. Her favorite dish is the fajitas and queso. She says, “Uncle Julio’s is my favorite primarily because my kids get so excited to go there. They get Play-doh while they wait, which seems to never get old.”
