For this month’s Dish, Bill Hester has provided us with a delicious filet and a Mexican café to die for.

A Little Bit About Bill

With 20+ years of experience in employee benefits and an emphasis on self and alternate funding, Bill has developed a sweet spot in health & wellness, predictive modeling and financial reporting. His years of experience have provided him strong ancillary benefit experience.

Bill has been with Forté Benefits since 2003 and became a full owner and partner in 2006. In 1995, he first began his insurance career with Unum after receiving his Bachelors in Business Administration from Texas Christian University.

Bill’s Delicious Dish

My favorite stay in meal is an 8oz filet grilled in my back yard with my family. If you buy the right meat, no marinade is necessary, just a bit of olive oil and salt & pepper. Cooked medium rare with a baked potato and my wife’s green salad (field greens, baby swiss, mushrooms, toasted pine nuts drizzled with her homemade vinaigrette) is how to truly enjoy it. Plus, don’t forget the Pinot!

When It’s a Good Night to Go Out:

Without a doubt, my favorite dine out meal takes place at the Original Mexican Eats Café – a Fort Worth tradition since 1926. When my family moved here in 1979 (I was 9), we would meet a group of families most Friday nights. It’s still a traditional family meeting spot to this day. My favorite Combination Plate is their pan-fried taco!

Thanks, Bill, for these awesome dishes! Be sure to enjoy a filet sometime soon with Bill’s easy preparation and side dish, as well as visit the Original Mexican Eats Café if you stop by Fort Worth.
